Description | |
Background | Aflatoxin (AF) was first discovered in 1960. It is a secondary metabolite of Aspergillusflavus and Aspergillusparasiticus, with a wide variety of species. Currently, more than 12 species have been isolated and identified. Common aflatoxin B1, B2, G1, G2, M1, M2, B2a, G2a, BM2a and GM2a, among which aflatoxin B1 is the most widely distributed, the most toxic and the most harmful. The thermal stability of aflatoxins is very good, and it is not easy to decompose by conventional cooking and heating methods. |
